Al Pastor Skewers

Al Pastor is a favorite taco order around here, and while I don’t believe these are completely authentic, the flavor is rich, tangy and delicious. The recipe has a marinade that acts as a bath for the meat (I’ve tried both pork and chicken, but shrimp would be great as well). Reserve some of the marinade to swipe on after grilling for even more flavor.

There is a decent amount of acid in the marinade, so don’t let the protein marinate for too long. Marinating in the late morning to grill that night seemed like a perfect amount of time for the citrus not to make the meat weird.
