There is a beloved apple cider doughnut loaf cake on Bon Appétit by recipe writer Sarah Jampel that uses a few different forms of apple to impart beautiful fall flavor. In studying the recipe, I came across a Sally’s Baking recipe with similar ingredients, the same idea of reducing the apple cider etc.
This recipe makes a batch of tender muffins that feel decadent with their sugar coating, but are still a passable breakfast, toasted with some Greek yogurt.
· Pumpkin Pie Spice: 1 tsp. cinnamon, ¼ tsp. Ground ginger, ¼ tsp. nutmeg, ¼ tsp. all spice, one grind of fresh black pepper. Mixed!
