These are sandwiches to sling on weekday mornings. I start the turkey bacon before I pour my coffee and everyone is getting dressed, then I can toast the buns and fry the eggs for a quick assembly. We can make these in under 10 minutes now. A fried egg is always the quickest, but I do love a slow scramble, which actually works great when you need to make a few at a time. Simple scramble your eggs with a splash of milk, over low heat until delicate curds form.

One kid prefers American cheese, best melted on the egg, the other one prefers avocado on there as well. I think they need a swipe of mayo (sauce, always), an herby garlic and herb one if you’re going at this on the weekend or can prep it in advance.

To make the garlicky mayo; sauté 2 cloves garlic to take the raw edge off and add ⅓ cup mayo + handful of both chopped chives and parsley and blend.

If you can get your hands on some juicy, summer tomatoes, add a slice in there!
