Our son has had a few soccer games near a Whole Foods recently and it had been awhile since I had visited their salad bar. I used to adore it until it got very weird and limited during the pandemic. It’s now improved and, although it’s not in my normal circuit, it is SO great for a grab-n-go lunch or snack. I purchased a little container of a similar Asian style chicken salad last weekend at a Whole Foods and made a go of things at home. You could pile it in a lettuce wrap for lunch, or put it in a just warmed wrap/tortilla.

Using a store-bought rotisserie chicken makes quick work of this salad! The Trader Joe’s peanut sauce thinned out with some lime juice and rice vinegar would work in a time pinch for the dressing! I used one 9 oz. bag of coleslaw mix (shredded cabbages and carrots) but if you want it more veggie packed than protein, you could use two!
