I think I made my family sick of ground meat so we’re taking a taco pivot here. Ground meat is so quick to cook that I’ve been using it a lot lately, but it does start to make things taste homogenous, so here we are. I marinated some chicken thighs so the meat was a bit juicier and had all my fixings ready. This would be an easy one to expand for a group!
The salsa recipe will make more than you’ll need for the tacos, but if you’re going to bother, might as well have extra for snacking for the week.
