Kale and Radicchio Salad w/ Beets & Blood Oranges

This salad makes the best of the slim winter produce; all the deep jewel tones look pretty as a side with a protein of your choice. This would go well with some salmon that you’ve slathered some mustard and maple on before roasting, or chicken cooked however your family likes it best.

The market I was at did not have endive stocked, but that would be pretty here too!

You can roast your own beets (trimmed, pricked with a fork, oiled, wrapped in foil and baked for an hour in a 400’ oven), but the pre-steamed packs are at every market now and will save you quite a bit of time.

I would say this feeds 4 if you have big salad eaters, but could easily stretch to 6, especially if your radicchio was large like mine was!
