
Chimichurri Orzo Steak Salad

We’re attending a few get-togethers this month where I need to bring a dish that can be prepped ahead or travels well. Orzo feels like a lighter way to do “pasta salad”, and this recipe packs lots of color along with a punchy chimichurri sauce that will make it bright and delicious. The steak is there to fill it out, but you could get away with no animal proteins, and perhaps throw in a can of drained white beans. I like a little bit of cheese here, but you could also skip that and use avocado to finish instead.
