Corn Salad Crostini

This appetizer is for summer, sweet corn, because we are leaning on it to be delicious straight off the cob. If you do think it may be mediocre, a little char on the grill will help bring out more flavor and hide any texture flaws.

If bringing this out to a bbq etc., keep the crostini, cheese, and corn in separate containers and assemble on site. The corn can be made a day ahead, but the salt will slowly start to pull water from the veg, so no longer than that.
