I’m aware that sometimes making a whole peanut sauce from scratch is a step you’d like to skip on busy nights. If you have a favorite premade supermarket peanut sauce, simply stir in some fresh lime juice and a little freshly grated ginger and garlic to brighten it up. I would say for ⅓ cup of peanut sauce, you should add the juice of one lime, 1 clove of grated garlic and a 2” nub of grated ginger. I like the new-ish shelf stable peanut sauce at Trader Joe’s.

I like the crispy rice trend, but can’t speak for my whole family on that one. Some cooked ramen noodles or just steamed white rice would give you the bulk without the crisp if you don’t want that step or texture.
