
Crispy Sesame Tofu w/ Coconut Rice

We haven’t been doing a lot of tofu lately and I came across this photo of crispy slabs of tofu that made me miss it. There are a few steps of dredging, but it is worth it to get the crispy texture!
With the coconut rice and cucumber salad, the pairing could easily go with chicken instead. Pound small chicken breasts thin, dredge them as you do the tofu below, and just adjust the cooking time.
My shortcut for the homemade peanut sauce is the shelf stable one at Trader Joe’s with a bit of lime juice added!
Lastly, the kids don’t eat a ton of tofu, but if all of your eaters do, or you like leftovers, consider doubling the tofu portion of the recipe. I like the sprouted tofu at Trader Joe’s and Sprouts because it comes in two smaller slabs, but don't go out of your way for this - you can just cut a large one!
