Enchilada Meatballs

These were made with a combination of beef and pork, but you could easily sub your preferred ground meat. If using ground poultry, add 1 tablespoon of avocado oil to the meatball mixture.
I went light on the cheese here. If you like things cheesy, you could get away with 1) doubling the shredded cheese or 2) sprinkling a bit of cotija on top.
Siete and Frontera make a lovely enchilada sauce. If you can find it, grab it!
