
Greek Sheetpan Gnocchi

To fit it on one sheetpan, and because I know the ratio works for our family, I did ¾ lb. gnocchi. If you are going to split on two pans for the roast, and have a hungry family, go for the full lb. and add a bit more oil and lemon to make sure everything gets "dressed." You do not need to par boil the gnocchi ahead of time, just throw them on there and be sure they are well coated in oil. They are not as moist as when you cook them in a wet sauce obviously, but they get slightly crispy and hydrate just enough from the veg moisture on the pan.
I don't always have the best luck with the Trader Joe's cauliflower gnocchi, but they would be the ideal option here for our gluten free friends. I do prefer them pan crisped or roasted as opposed to boiled for sure. Alternatively, you could add some protein by way of Mediterranean meatballs or marinated chicken as well!
