I always make shreddy chicken like this when I need to use up some of my tex mex ingredients all at once. The fillings could go into a taco or burrito, but it looks so pretty in a stuffed poblano. It would make a great dish to deliver to others before that second bake as well! Save all those lovely toppings to garnish afterwards.

I try to keep things easy but there are some upgrade moments here for the components. As written, we depend on the enchilada sauce to flavor things. I will get a batch of Spanish rice going from a box or use leftovers from a takeout meal. As for the black beans, many stores sell seasoned beans - Trader Joe’s has their own, A Dozen Cousins, Bush’s etc. Another time saver would be to just brown up a pound of ground chicken, turkey or beef with some taco seasoning and a bit of tomato paste in place of the shreddy chicken.
