A lunch salad or something to bring along when you have a few gluten-free eaters in your midst. There is so much lovely spring produce available right now, and all it takes to make a great salad is some thinly sliced crunchy things, a good dressing and a bit of quinoa to act as a “base”. This entire salad can be prepped in advance and dressed as needed. To blanch the snap peas, dunk them in salted, boiling water for 30 seconds then drain and transfer them to an ice bath. Drain again.

I am not going to list it, but some avocado or feta cheese would work here to add richness! If you don't do chicken, make the salad without it and add your own seared salmon, some roasted tofu cubes or a can of drained white beans to the mixture to fill it out further.
