The subject of chicken marinades came up in our SKCC Facebook group and I realized that they’re all buried here within larger recipes. So this recipe is a meal suggestion, but it’s also about the marinade. The marinade is sweet and spicy and chars a bit when cooked with that final blast of heat (more char on a grill!). You want surface area for more marinade to soak in, so pound your chicken down to an even thickness. Two pounds of chicken is a generous amount to feed four, but my family always loves having leftovers. This recipe calls for rice and broccolini, but I could see some roasted sweet potatoes or green beans working too.

Only the chicken and marinade will show up in the grocery list. Please add the rice, broccolini and cucumbers if you want to make a bigger meal of this! It is not Korean at all, but I like to make a quick tahini lime drizzle to sauce things up at the end (¼ cup tahini, big splash of cold water, juice of one lime, one grated garlic clove, salt and pepper).
