It’s not at every store, but both Trader Joe’s and Sprouts (two of my frequent grocery stores) sell “thin” chicken breasts. I always suggest you pound a standard chicken breast thin for even cooking, but it’s sort of a messy task and makes for more dirty dishes. I love when I can find them already thin! The thin cut works especially well here, because a thinner piece gets more marinade, more char and generally more flavor. If you cannot find them, simply cover the chicken with saran wrap and use a meat pounder to pound the chicken to ½” thickness.

I like the harissa paste from Mina as it’s mild enough for kids. They make a spicy version as well if you house likes that. The Trader Joes one is pretty warm, but in the marinade, it’ll tone down for sure.
