A recent conversation yielded more folks mentioning that they don’t love raw tomatoes, but prefer roasted tomatoes which can have a more pleasant texture and taste. I appreciate that roasting can extend the life of a tomato for salads, eggs, or a lunch bowl like this recipe.
I doubled the batch of tomatoes for multiple uses and cooked up this simple lentil salad with some of them.
