
Mini Meatballs w/ Pastina (Spaghetti O’s)

You start with teeny meatballs, then add a red sauce with a little cream to the same pan. The pastas are cooked in the pan as well, making it a one dish wonder. I hodgepodged a few recipes together to make this. If you like the sauce thinner, simply add more broth. Like it richer? Add more cream and a little more parm.
This recipe makes a lot of mini meatballs, maybe more than you’ll need depending on what ratio you like, but they can be saved for snacking. I know there are a handful of people here that depend on the recipes including a vegetable, and I appreciate that. I served a Caesar salad on the side, but you could also stir in some spinach in if you wanted a veggie included.
