We do a lot of meatballs and it was time for them to not be Italian for the moment. A hint of spice, a tangle of carrots and a creamy sauce. It looks like a few extra steps but it’s a wonderful weeknight dinner! Check the tips below for how to get ahead. The carrots here are simple, barely seasoned, but we have sauce to jus everything up! I left heat out of the sauce to keep it kid friendly, but half a jalapeno would be nice for some kick!
