
Pesto Chicken Meatball & Veggie Sheetpan

This time of year, making pesto from scratch is wonderful thanks to all the fresh basil. However, Costco’s pesto (a bit heavier than my homemade version) is the best store-bought option I’ve found.
For summertime vegetables, I used zucchini and peppers. You could also include onions, eggplant, or fennel — whatever your family prefers — as long as they cook quickly. Avoid vegetables like potatoes or cauliflower, which require longer roasting times than the meatballs.
I didn’t include a starch here, but fresh toasted bread, polenta, or pasta would pair perfectly.
