I don’t mean to be overly specific about the chili powder. Ancho or even just a general “chili powder” are all fine! I did one chipotle to make them kid-friendly, but go for two if you like more heat. You can absolutely use flour tortillas, they'll hold better to be honest, but we always have the 200-pack from Costco that needs to be used! A note on corn, after the comment below, you need to use the thin, more pliable brands, not a thicker super whole-meal sort.
I added a chunk of cream cheese in here for richness and it also acts as “glue” to keep things together, but by all means it can be replaced with a dairy free alternative. It helps keep these taquitos well balanced to be eaten alone with a dip of salsa.
