A back-to-school snack or quick breakfast to grab on the way out the door; these are so textured and excellent! Those who are looking for a more nutritious dessert, I think a swipe of whipped cream cheese on these could fool someone as a “carrot cake” substitute. They could definitely take a sprinkle of walnuts or some shredded coconut. It’s a pretty wet batter, so you definitely want to use muffin liners so they don’t stick to the pan.

If you do not care about them being gluten or grain-free, sub in 1 2/3 cups all-purpose flour.

The muffins are sweet since I wanted my kids to enjoy them, but I think you could pull back on ¼ cup of sugar if you wanted them less sweet. These muffins don’t have super high domes, but I love these tulip muffin liners (https://amzn.to/41bR1RN) for any and all muffins.
