These are so delicious! If you use bread that is really dense or…bready, scoop out some of the insides to make room for all of the fillings. If your loaf is on the larger side, simply scale up the filling amounts.
For those looking for a lower carb lunch, I would take all of the components and make a chopped salad using some sturdy greens like kale and romaine, and adding more lemon juice to the pesto for a dressing.
This recipe keeps things light with just crispy prosciutto, but it can take more deli meats if you’d like it to add more protein.
I know a lot of you don’t love olives, so totally skip the tapenade additions here and just swipe mayo on the other side.
