
Seared Halibut w/ Lemon Caper Pan Sauce

Serve this with some rice pilaf and steamed or roasted vegetables for a full meal. White fish always feels light, but this excellent sauce adds the depth and interest it needs. I had halibut on hand, but flounder or sole would also be good options. Both of those are flatter fish, so watch the cooking time. As pictured, my halibut was thin as well, but that was unusual.
This will make exactly enough sauce. If you want extra for perhaps a chicken dinner later in the week, or to have sauce lovers, consider doubling it. Things move quickly, so get any sides moving before you start the fish.
