You can be fancy and make the toasted pita crisps or split naan breads, but store-bought are great in a pinch. I know in an Italian panzanella, you want the bread component to absorb the dressing, but in this recipe, I like the texture when the bread is crisp.
You can make za’atar yourself, find it at most well stocked markets, or online.
