This recipe does not lean “light” as I typically try to, but I was making this for a special occasion and cutting back was not the priority. My family tries sticky toffee puddings at restaurants because Hugh loves the warm caramel and ice cream combo. This recipe is excellent, moist and rich in the best way! I added some pumpkin puree here to make the cake even moister.

I know having extra canned pumpkin around can be annoying, but you can stir a few spoonfuls into oatmeal, pancakes or a smoothie. You can also use it in banana bread as an equal swap for some of the banana puree; it’s a delicious combo.
