I made this for some friends and used a whole pound of pasta and as part of a larger spread, it fed 8 as a side with no issue. If this is all you’re making, I still find ¾ lb. of pasta to be enough to feed the four of us, but if you have bigger eaters or like leftovers, go for it and use the pound pasta and increase the pesto by 50% too. Like a restaurant, I often add a generous nub of good butter when I mix in the pesto as it helps make things extra creamy. I didn’t write that in, but use your discretion.

I do think you could brown up some sausage and add that on top if you're looking to add animal protein.

Read the instructions before cooking this recipe! You truly need all the pasta water to get the pesto moving.
