
Roasted Cauliflower w/ Farro & Green Tahini

I made this as a lunch salad that could be eaten at room temperature, but the colors were so pretty that I am going to keep this in mind for entertaining. It would go well with any sort of grilled or roasted meats, and is, consequently, dairy free. I put it over some crisp baby gem lettuce leaves for that fresh crunch contrast, but it could also be a warm side with just the cauliflower and farro. A mix in of a bunch more fresh herbs would be delicious, and a crunchier nut and some feta could even work. Anyway, it was delicious!
I found the multicolor cauliflower at Trader Joe’s, but cauliflower comes in all those colors at other markets too and the basic white cauli would work beautifully, just not as colorful ;)
