I took some notes from Ina Garten with the garlic, but I wanted a whisper of the flavor, not too much. Use big cloves since potatoes can take on lots of flavor.
Never one for gadgets, I do actually find a potato ricer to be essential for good mashed potatoes. They make for an excellent texture that hand mashing just doesn’t touch. Do I use it often? No, but I loan it to friends during holidays and it feels worth it to have.
Lastly, mashed potato consistency can be a bit personal. I went moderate on the liquids. If you’d like your mashed potatoes looser, simply add more milk until you get the consistency you desire.
