One of our favorite restaurants has a spring salad made mostly of snap peas and we’ve gone back a few times because we love it. I really enjoy a non-lettuce salad, but when I made this at home, I did add some baby gems to fill it out.

There are a few niche ingredients used in the original restaurant dish that may be hard to find. If you want to be fancy, here is the preserved lemon paste I bought for the dressing and the Yuzu Kosho. I didn’t want to call on these unique ingredients that I had to mail order for SKCC, so alternatives are below. You can find preserved lemons at Sprouts, Whole Foods or well-stocked international markets.
