
Spatchcock Chicken w/ Beets & Horseradish Cream

If you have a tough time with raw chicken, or simply don’t want to spatchcock the chicken, a butcher can do it for you. I have them remove the backbone for ease. Here’s a link to a video of how to do it yourself.
You will want to check the chicken’s internal temperature in a few places because the bottom doesn’t cook quite as quickly as the top.
