Street Corn Kale Salad

Another great side salad for a summer bbq meal. This is deconstructed street corn with some chopped kale added that turns it into a pretty, crunchy salad that goes well with all grilled foods. It would also be great for a taco night!

I always prefer yellow corn for its brighter color and, even if it’s in my head, sweeter flavor. Corn is heavy, so it needs a sturdy green. If you don’t love kale, a fresh romaine and/or cabbage would work.
