
Vanilla Cake w/ Strawberries & Cream

This is not a special occasion cake with layers and buttercream. It is a simple, one bowl, vanilla cake that bakes up nicely and is the perfect backdrop for lots of spring strawberries and some barely sweetened whipping cream. The kids loved it, and it may make another appearance at our Easter brunch.
I tried baking this in both a rectangle (pictured) and large circle cast iron skillet. While serving a crowd, cutting up squares and dolloping cream and berries was in some ways easier, but I liked how the circle looked. There a few notes on pan size at the beginning of the recipe.
