
White Bean & Tomato Skillet

The last of the good tomatoes! I made this skillet, and some family members put the combination over chicken, while others scooped it up with some toasted bread. I used two cans of beans to feed four, and when I made this again for just two of us, one can was plenty. I’ve listed one can here, because I preferred that ratio (more tomato-y) and it would be plenty with a protein or as a side, but if this will be a whole meal, you can up the amount to two cans of beans with no other changes!
If you want it even saucier, a splash of broth at the end, along with a splash of cream or vegan alternative would give it some jus.
