Zhougy Bean Picnic Salad

Zhougy Bean Picnic Salad

I prepped this for a girls’ night/beach picnic as an alternative to cheese and crackers. I’ve been making this dressing for lots of salads lately and it goes with everything. You can toss it on roasted cauliflower, grilled corn and tomato salad or it could be used instead of honey mustard in the mason jar salads. It’s quite versatile! I buy the prepared Zhoug sauce at Trader Joe’s, but here is the archived recipe if that is not accessible or you prefer homemade. Also, pictured, I left the artichokes whole, but after we ate it, I wish I'd chopped them. I like the photo to match the recipe below, but if you read this, consider chopping them!

The recipe has many heavy bits in it so it lands as more of a side than a green salad. Add sturdy romaine if you want to stretch the recipe out!
