99 Weeks! Get out. So many weeks. This week, we're circling back to some favorites, because as weeks pass quickly, wonderful, older recipes get buried in the archives. I have been making these enchiladas for years and they are a great place to use the abundance of summer zucchini. Swap out the cheese if you're not into goat cheese, buy pre-made enchilada sauce, or whip up your own from scratch if you're fancy. They are so much easier to make than you'd think and double up as a breakfast option with a fried egg on top. We also have a simple quinoa dish that can take your desired grilled protein, and a unique turkey burger if you're looking to change up the classic. And let's cheers with a margarita because 99 Weeks! And even if this is your first week here (welcome!), I'll bet you deserve a cheers too ;)
