Week 115

I felt like we were dangling on the axis of our life this week. A long story of a business issues, days off school, and just America this week... most of my meals were toast or sugar in some format. I am excited about the meals this week, especially that simple squash dish. I love how wild rice can fill out a salad and make it substantial. The salsa verde stew sits well for days, getting even better really, and excellent as both a make-ahead or deliverable option. So curious to hear what you think. Of course 'tis the season to revisit Samin's whole roasted chicken that had a bath in buttermilk, as well as these sturdy muffins, for those of you looking to nudge a handheld breakfast or snack to your littles. Part oat puck, part muffin, and all the fall apple smells of deliciousness.
