Heyo! Reporting from a rainy, dreary day with an oat milk cappucino. If outside your window looks similar, I would suggest putting the cauli bolognese on your list. We watched the Life on Our Planet documentary with the kids, so we're trying to lean on a few more vegetarian meals during the week. I don't find extremes seem to stick for us/me, as the goal is to make these changes sustainable, but we are all paying more attention. The Citrus Quinoa is a great lunch addition, Fish Tacos are an easy, family favorite and I can say the same of the Peanut Butter Oat Muffins.
