WEEK 128!

Hey friends. I'm excited about these enchiladas and curious what you think. I took the Walnut Chorizo we've made before and mixed it with a few more things to stuff into enchiladas. Dairy-free folks, make the cashew sauce I mentioned over on Instagram and I'll add it to the sauce archives next week. You don't need the cheese or sour cream topping with that amazing creamy sauce. We also have a warm Dal for a cozy bowl of goodness and some easy pizzas. The oats are the perfect texture, and I've been making larger batches and portioning them out for an easy morning reheat.

A few of you asked for some Superbowl foods for this weekend and unfortunately, I was not paying super close attention to dates when planning the menu. I will say that the pizzas or enchiladas in this week's menu would be great, and there are also some great items in the archives. Maybe the Stuffed Mushrooms or Carnitas or Crispy Butternut Tacos or oh and Peanut Butter Crispy Balls for a sweet treat! And margaritas too. We put the cashew nacho sauce I mentioned over Sweet Potato Nachos last night which would be a great option for your vegan/veg pals. It's an excuse to make something different!
