Week 138

One hundred and thirty eight. If you have been here since the first few months, can we just soak in that number for a second. That is a lot of weeks. I have my weeks of feeling completely burnt on this project, and then I get a bee in my bonnet with an idea or a nice note or a pretty photo and am so grateful that you're here cooking along. Thank you. Even if this is your trial week, thank you for hopping in too ;)

This week, we're making a quick teriyaki-style sauce with coconut aminos. Notes in the headnote if that is a new ingredient for you. You don't need to be stuck on the chicken part, use tofu or a mix of tofu and mushrooms as a sub. There is a simple scramble with spring's abundant asparagus that can be made in 15 minutes max, and then a meal that I'd consider crafty (my kids LOVE making these) with the vegetable potstickers. The muffins are what my kids would consider a treat because they are dark chocolately looking, but the sugar is mild and there are vegetables inside, making them a great, anytime snack. Just don't expect a brownie.

Here is the info for the Kid Cook-a-long next Sunday at 3pm PST. For better or worse, my son and I are making Spinach Turkey Meatballs and would love you and your littles to join along. We'll keep it short, I promise I'l watch my language, and you'll get dinner out of it! The recipe and grocery list will go out to our SKCC email list. The meeting can hold 100 people, and while I don't imagine that many folks making it, know that it will be first come first serve to those 100.
