Happy Friday!

It's a fully vegetarian week as a nod towards Earth Day. We definitely try to eat more plant-based, while not exclusively so, and I know many of you like mostly vegetables too. The sloppy joes this week are similar to the ones we did years ago with ground turkey, but this will have your veg (vegan really!) changes in there. The crazy quick soup is from Heidi Swansons new book, which features a great collection of extremely simple, vegetarian recipes. The artichoke, while not a meal for most, is a new-for-me method, and thought I'd pass it on. What do you like dipping yours in? And can we all marvel that they are one of nature's most beautiful edible plants?! The heart, those leaves, that odd furry center that's annoying to get out but makes eating the heart eve better?! What a beautiful world.
