Happy Friday!

This week, we are making a collection of Prep-Ahead recipes. In response to the request for lunch ideas, I thought we could make a few hearty salads that can sit well for an extra day or two. This means they would make a lovely dinner, with a protein added if you'd like, and can hold up well in the fridge to eat for lunch.

The egg cups are for breakfast on the go. They do work best in a silicone muffin tin, as egg based things always seem to stick pretty bad otherwise. I included a link in the headnote of the recipe, they are pretty inexpensive and available at most home stores. Otherwise, it can be made in a pie pan like you would a full sized quiche! And because a baked oatmeal is warm and delicious, and also heats up well, we are making one of those as well, with some steel cut oats for great texture. I hope these recipes to make in advance (if you want/need!) can help you get ahead on busy days and nights. I love all the color and freshness spring produce brings.
