Week 142

Hey friends!

May is so full for us, so this week's recipes (month's recipes?) are reflective of less time being committed to dinner prep. We're making some simple seared scallops with garlic and wine and butter which is the best way to do shellfish pastas. You could sub shrimp or even hearts of palm as your "scallops." Have you seen those? The coins of hearts of palm look just like scallops. Anything can be what you wish it to be with some good seasoning and a hot sear in butter. I'm also getting lots of beets in my CSA basket so we're making a simple salad with those and this crunchy kale salad that is a knock-off of the ever popular salad from the Hillstone restaurant group. Also, the best zucchini bread. Classic and speckled with greens and inclusive of chocolate or walnuts or whatever you like to throw in.

We're heading down the coast for a couple nights to celebrate my birthday (i.e sit by a pool and read, drink tequila, sleep in, and go out to dinner with friends) but please let me know if I missed anything or you have any questions.
