Week 162

You are going to love this week! It feels fall-ish and satisfying and still packed with produce. Many of you continue to ask for lunch ideas, and the leftovers here reheat beautifully. Toss together some greens to go along with your frittata or make extras of the salad so you can eat it again the next day or tuck it in a wrap. I am not one to reinvent the wheel for lunches, it is either leftovers, or a fridge-clear-out salad which is typically greens, cukes, any other raw vegetables that need to go (sliced thin!), olives or olive tapenade, leftover chicken or I'm not above ripping up a few pieces of deli slices to get some protein in, avocado, and then either a scoop of a cooked grain or legume I have on hand and some crumbled crackers. This should all be tossed in a bowl larger than you really need, which makes it easier to toss and get the right ratios on every bite. Ideally this is eaten with a large spoon because crackers are very hard to stab with a fork. Oye, I will work on lunch inspiration because I love you but don't overlook dinners being repurposed into salads and sams the next day!
