Week 172

Happy Friday! Are you doing much baking for the holidays yet? I am actually making banana bread today (brown bananas call) and am looking forward to trying some new cookies next week. I have a handful of baking cookbooks to page through, and have plans to make these gingerbread cookies and these chocolate PB balls for a cookie exchange next week. I want to be the lady who delivers baking boxes to friends of mixed baked goods...maybe next year ;)

This week's menu! Delicious. We are making burgers that don't need a grill, just a good vent fan. It includes some oven fries and a yummy sauce. For those of us needing something light, this salad is bright and satisfying. If you are up for a bit more chopping, there is also a Thai fried rice situation with some marinated tofu and all sorts of veggies. It saves well, and reheats easily if you like leftovers for lunch the next day. Lastly, a skillet pancake that will keep you from spending all morning flipping little cakes. Remember it is not a "cake", so the texture is a bit more dense yet custardy. The compote is delicious and whipping cream can be replaced with yogurt if you prefer!
