Week 174

Happy New Year! If you were gifted a membership for Christmas and this is your first week, welcome! Happy to have you along. I hope this evening you have something special planned, whether it be dining in or out, with friends, dancing, or playing games and the like. I would love to hear what you are making. We are celebrating at home and I have things for a coconut, gingery sweet potato stew deal or mushroom bolognese. We'll play a little bit of Mario Kart and the Family Edition of Card Against Humanity and have a mini dance party. I won't speak of goals and hype up for the new year quite yet - I always find those conversations are more effective and motivating when I'm ready to do something about them and am not quite there yet. Need my kids back in school first :)

This week's menu is intended to feel lighter after holiday sweets. I am not one for diets or extremes, but our bodies intuitively lean towards balance, as many of you told me you'd like a veggie heavy January. We're making a new veggie patty that my kids loved as well, a delicious pesto that is great on eggs and this cauli pasta, as well as a super simple chopped salad you can prep ahead for lunches or dinner with any added protein. Look forward to catching up with you all!
