Week 178

Hey everyone! How is everyone hanging in there? I was chatting with my daughters Kindergarten teachers yesterday about the absolute exhaustion they are experiencing trying to navigate teaching young kids right now. Gosh, the last two years really. The apathy is palpable lately isn't it? Make soup, write notes, affirm your teachers this week! They get lots of treats, it is January after all, so I'm going to deliver taco salads to them next week. Weird? Maybe. But I have pretty good rapport with my kids teachers so I think it will work out :)

We have had some requests on the what and how of jackfruit, so we have an adobo marinated dish this week that will resemble shreddy chicken. You want to be sure to rinse and drain it before using. Any leftovers here would be great tucked into a tortilla. We're making another warming soup with cabbage (abundant in winter!) and some bbq chicken sams that the kids will like and would be a perfect game day meal. Lastly, waffles! The batter also works as pancakes and leftovers toast well for weekday breakfasts. We use this tiny Dash one now, but a real one is on my wish list. I love all things Breville but that comes with a higher price tag, and have heard great things about this one, just looks like a lot to store. Let me know if you have one you love!

Lastly! I'm going to be back on the zoom class train. Once a month. Hold me to it. Next one will be next Sunday Feb. 6th at 3:00pm PST. Please give me feedback on time of day that is best, I know we're working with all sorts of time zones so figured we can try that and then see what ya'll say. I will make something from the menu that goes out that Friday. Either a Goat Cheese Red Pepper Pasta or Hoisin Pork/Tofu Bowls, we'll see.

We're heading up to the mountains for a change of scenery and so excited. Have a great weekend friends!
