Week 181

Hey hey! Happy long weekend! We took the kids down to San Diego just for a night to be somewhere different and make the most of a really fun pool. I am currently typing my headnote, eating crackers and drinking a glass of red in the bathroom so the kids fall asleep, and I can sneak out there to read my new Colleen Hoover book.

We've had a few recipes lately that take a few extra steps, and this week is much quicker. These pancakes are whizzed in a blender to pull off this weekend, or to save for a weekday, when you can get in a little protein bump from that cottage cheese. Looovveee that pasta dish. It takes well to cauliflower but a sausage add in works too. The Hoisin Pork dish was another one-pan-weeknight-success, and a good place to hide a lot of cabbage from the kids. It can easily be done with tofu for our veg friends! Hope you find some simple favorites this week.
