Hm, coincidentally an all vegetarian week! I do really love love this salad, mostly because the dressing is fun and different, so don't skip that one. Add whatever protein you fancy and it's the perfect summer dinner. We also have a pile of delicious things to put on bread and an orzo salad that is great for a group or picnic or something to have around that will roll over into lunch. Lastly, my mom's grandma name is Lulu and this is the one legacy recipe I have from her :) Yes, one, and you will formally know it as "cowboy caviar" but let's just let Lulu have this one.
