My favorite recipe this week is the Sweet Potato Peanut Stew. Yes, the photo looks like glop because photographing soup is tough, but the broth is rich and delicious and while we did add chicken, it is perfect vegetarian too. Some of our busy weeknights benefit from a dinner that I can prepare earlier in the day and this is the one. That said, the enchiladas fit that criteria as well. Get all your roasty bits roasted, roll them, and bake them off at dinner time. Mckenzie wrote this salad recipe and at first glance, it may sound basic, but it's excellent. You know I love a textured salad, and the crispy crumbs here distribute between that a crouton and don't hurt your mouth. If you are not a shrimp person (raises hand) sub in your favorite protein or make it as a side. And a loaf! Everyone loves a loaf cake. Especially my children.
